Easy coconut bar/pie (Marie Moreau)

1 STICK MELTED BUTTER
1 ¾ C. SUGAR
4 LARGE EGGS
½ C. SELF-RISING FLOUR
2 C. SWEETENED SHREDDED COCONUT
2 C. MILK
1 C. PECANS (OPTIONAL)
(I added 1T. all purpose flour to firm it to make bars.)
PREHEAT OVEN TO 350’, BUTTER 2 PIE PLATES OR 9/13 PAN. MIX INGREDIENTS AND DIVIDE EQUALLY IN PIE PLATES. BAKE FOR ABOUT 1 HOUR UNTIL PIES ARE FIRM TO TOUCH AND GOLDEN.
NO SELF-RISING FLOUR ON HAND, DO THIS:
½ Cup ALL PURPOSE FLOUR
¾ teaspoon BAKING POWDER
½ teaspoon SALT

Quickee Cake Mix (Romola Laninga)

You need two boxes of cake mix. One can be any flavor you prefer, but the other MUST be Angel Food cake mix. Mix them together (shake them in a big bowl). Then simply store the mixture in an airtight container until you get the urge for dessert. Then just put three Tbsp. of the dry mixture in a big coffee mug and stir in 2 Tbsp of water. Microwave it for one minute and you will have a single serving of cake! Top with fruit, ice cream, whipped cream or whatever! Awesome for those of us who want something sweet every now without making an entire cake!!!

Creamy Potato Soups (Ardis Schenk)

4 cups peeled, cubed potatoes
1 cup celery, chopped
1 cup onion, chopped
2 cups water
2 teaspoons salt 1 cup whole milk
1 cup whipping cream
3 tablespoons butter
2 tablespoons parsley flakes
1/8 to ¼ teaspoon pepper
Combine potatoes, celery, onion, water, and salt in a large soup pot. Simmer covered for about 20 minutes or until vegetables are tender. Stir in remaining ingredients, return to medium heat and cook until thoroughly heated. Makes about 7 cups. Enjoy the compliments.
